I
was diagnosed with celiac disease in 2009 and I remember giving up gluten the day
I was given the test results. I immediately went to a couple stores that
carried gluten free products and bought everything in sight. A few weeks later I remember feeling absolutely
starved no matter how much I ate. I felt like I was missing something, and that
my body was being deprived of something it needed. I decided then and there
that was no way to live and I had to learn how to cook all over again (and as
if the task of finding gluten free meals wasn’t enough, my husband is also allergic
to seafood and most nuts). It was all quite overwhelming at first - it seemed
like the list of things we could eat was far outnumbered by the things we couldn’t
eat. But it turned out that being diagnosed with celiac disease was a blessing
in disguise. I’m healthier than I have ever been in my life. I now read all
food labels and make much smarter choices about what I put into my body. I make
every effort to eat clean, while still trying to balance convenience and
budget.
As
a wife and new mother I am always on the lookout for new, healthy meals to
serve my family. I’ve created this blog to share some of those meal ideas and
recipes with you. I hope that you will find them useful and that they will
inspire you in the kitchen. If you modify these recipes to suit your own taste
(as I often do when cooking), I encourage you to post a comment sharing the
changes you made and what you thought about it. I love trying out new things in

If
you’re new to gluten free living, just remember that going back to the basics
is best. Rid your cupboard of the processed foods and start cooking from scratch
again. It may be a big adjustment at first, but it does get easier. You’ll be a
gluten free expert in no time! And your body will thank you.
